Det finns två svenska produkter som fått EU:s märkning “garanterade traditionella specialiteter” – hushållsost och falukorv.

Falukorv är en varmrökt korv med minst 45% kött samt fett, potatismjöl, lök, salt och kryddor. Korven fick sitt stora genomslag i Sverige under 1900-talet men dess historia går tillbaka till 1500-talets Dalarna och koppargruvorna i just Falun. Stora mängder oxar och hästar transporterades till Falun för att deras hud skulle användas för att tillverka linor med vilka man kunde hissa upp kopparmalmen.

Tyska gästarbetare vid gruvan lärde faluborna hur man kunde använda ox- och hästköttet för att röka korv. Receptet blev snabbt populärt i övriga Sverige. Namnet “falukorv” myntades i Stockholm 1834 och det var i slutet av århundradet som falukorven som vi idag känner den utvecklades.

Falukorvens popularitet i Sverige går nog att förklara med dess neutrala smak och att det finmalda köttet i korven gör den lättuggad och därmed passar som mat till barn. Korven kan ätas t.ex. som falukorv i ugn med potatismos, i en korv stroganoff eller helt enkelt skiva med makaroner och ketchup.
